Mounds Park area block clubs

The quarterly meeting of the Mounds Park Area Block Clubs was held on Tuesday, October 10th. In attendance were representatives of the 'Metro' sewage treatment plant who gave a presentation on measures currently under way to reduce the odors associated with their operations. Bill Gunther from the City of Saint Paul's office of License, Inspection, and Environmental Protection (LIEP) was on hand to assist resident's in their efforts to have recurring noise complaints remedied in a timely fashion. At this writ- ing, an acoustical consultant was scheduled to begin tests at the plant on October 24th. 
   Representatives were also present to provide information about plans to expand housing options and services to senior citizens at the Marian of Saint Paul site. Current plans call for demolition of existing structures to begin in April of 2001 with construction of 90 units of independent living apartments, 60 units of assisted living apartments and a chapel to begin in June. If all goes as planned, construction will be complete and the building open for residency on October 1, 2002. 
   At the Tuesday, January 9th quarterly meeting, attendees will make some decisions regarding formation of a resident's association for the Mounds Park Neighborhood. The purpose of such a group would be to seek a greater voice in City and County decision making, as it affects our neighborhood. The Portage for Youth

PORTAGE FOR YOUTH GIRLS AND WOMEN'S CHOIR
   The Portage for Youth announces the formation of a new Portage program, The Portage Choir. The Portage Choir is open to all girls and women who are interested in having some fun, singing for the joy of singing and performing in a variety of situations and at functions as ambassadors of "Giving Girls a Voice".
   The choir's first performance was the evening of October 11th at a reception for the new director of the Minnesota Women's Foundation, Jane Ransom. This foundation is dedicated to getting money into the hands of non-profits that provide programs by and for women and girls to create change on their own behalf. The Portage for Youth, dedicated to giving young women a voice, fit right into the theme of the evening. 
   Held at the Walker Art Center in Gallery 8, the choir performed two of their original songs; "Faith in Someday" and "Voices in the Wind". It was a huge success, and very gratifying to see this rag-tag team of enthusiastic girls singing songs that were written at the Portage. Lead singers Mai and Mai Yia shone as they sang and director Barbara With carried on, even when the soundtrack quit playing during her part of the song. Thankfully, it came back on and everyone recovered in time to end on a high note. All in all, our first public appearance was a gold medal event and a whole lot of fun for everyone involved. 
   Our next performance was Saturday evening, October 28th. We sang for a conference hosted by the Institute for Violence-Free Families at the College of St. Thomas. Following a sermon, the Portage for Youth choir sang, "Voices in the Wind," a song about listening to the voices of the children and how they can lead us to answers to ending the abuse.

What: Sing-A-Long Recording Session 
When: Thursday and Friday, Nov. 9-10, 2000 
Where: Angel Beach Studios 
Who: Winners from auditions will record their parts on Thursday night, and everyone else is invited to come on Friday and sing on the chorus!

More Upcoming Events
Next month, we will be hosting our own television show on SPNN. All of the details have not been worked out yet, but we will keep you posted. The name of the show will be: The Portage for Youth, YWWAV TV (Young Women With A Voice). It will be hosted by Portage for Youth participants and will cover a wide variety of subjects such as entertainment, the arts, and young women's issues. We would like to collaborate with as many organizations as possible in putting together a GREAT program that young women will want to tune in to every week.

Elections for the Dayton's Bluff District 4 Community Council Board of Directors were held on Monday, October 16th. Those elected will take office on Monday, November 13th. The winners are: 

At Large: Donavan Cummings, Terry Byrne. 
Subdistrict A: John DuFresne and Dave Decker. (tied for one opening, final outcome yet to be decided). Subdistrict B: Kelly Charles, Gene Piccolo, alternate Dave Vorwald. 
Subdistrict C: Paul Bruski, Greg Cosimini. 
Subdistrict D: Steve Duerre, Dave Murphy, alternate John Sipf. 

Thanks to all of you who participated in this year's elections. Your involvement in this process helps to make Dayton's Bluff a worthwhile place to live, work, and play. 

Cooking in the Bluff

This month, I have chosen a diabetic recipe, a delicious low fat  recipe, and something special to try if you are on low sodium diet. Enjoy! 

Diabetic Sunshine Cake
Ingredients: 
2 1/4 cups flour 
7 1/4 teaspoons Equal Measure or 24 packets Equal 
3 teaspoons baking powder 
1/2 teaspoon salt 
3/4 cup cold water 
1/3 cup vegetable oil 
4 egg yokes 
1 teaspoon vanilla 
1 teaspoon orange extract 
2 teaspoons grated orange rind 
8 egg whites 
1/2 teaspoon cream of tartar 

Orange Cream Cheese Glaze:
5 cups assorted fresh fruit (optional) 
Equal Measure or Equal sweetener 

Directions:
Combine flour, Equal, baking powder, and salt in large bowl; beat in water, oil, egg yokes, vanilla, orange extract and orange rind. 

Beat egg whites in large bowl until foamy; add cream of tartar and beat to stiff peaks. Stir in about 1/3 of the egg whites into flour mixture; fold flour mixture into remaining egg whites. Pour batter into an ungreased 12-cup fluted cake pan. 

Bake in preheated 325oF oven until top springs back when touched, 60 to 70 minutes. Cook cake in pan on wire rack 10 minutes; invert cake onto wire rack and cool. 

Place cake on serving plate; spoon Orange Cream Cheese Glaze over top. Sprinkle fruit with Equal to taste; serve over cake slices.

Baked Apples 
Ingredients: 
4 large tart apples (such as Gravenstein, Granny Smith or Rome), cored 
1/4 cup fresh lemon juice 
1/4 cup brown sugar 
1/4 cup chopped walnuts or pecans (optional) 1/4 cup currants or raisins 
1/4 cup maple syrup 
Cinnamon (about 1/4 teaspoon) 
Nutmeg (slightly less than the cinnamon)

Directions: 
1. Preheat the oven to 350 degrees. 
2.  Place the cored apples in an 8- inch glass-baking pan. 
3.  In a small bowl, combine the lemon juice, brown sugar, walnuts or pecans (if desired), and currants or raisins. Mix well. 
4.  Divide the mixture into four 
equal parts and stuff into the cored apples. If you have extra, just sprinkle the remaining filling on top. Pour the syrup over the apples. Dust the apples with cinnamon and a smaller amount of nutmeg. 
5. Bake in the oven, uncovered, for I hour. 
Yield: 4 Servings

1 tbsp Ground Basil 
1 tsp Ground Marjoram 
1 tsp Ground Thyme 
1 tsp Ground Parsley Flakes 
1 tsp Ground Savory 
1 tsp Ground Mace 
1 tsp Sage 
1 tsp Ground Rosemary 
1 tsp Ground Oregano 
1 tsp Black Pepper
